  • Kosher salt
  • Freshly ground black pepper
  • 3 lbs chuck roast
  • 2 tablespoons olive oil
  • 1-2 onions, quartered
  • 4 garlic cloves, coarsely chopped
  • 2 cups beef broth
  • ½ cup dry red wine (optional, see notes)
  • 2 teaspoons Worcestershire Sauce
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 bay leaves
  • 4 large carrots, cut into 2-inch chunks
  • 2 lbs baby yellow potatoes
  • 2 tablespoons cornstarch
  • 1/4 cup water

Instructions:

  • Season the chuck roast generously with kosher salt and freshly ground black pepper.
  • Heat olive oil in a skillet over medium-high heat. Sear the chuck roast on all sides until browned, then transfer it to the slow cooker.
  • Add quartered onions and chopped garlic to the slow cooker.

  • 2 cups pepper jack cheese, shredded

  • Salsa, to taste
  • Guacamole, to taste

Instructions:

  • Preheat your oven to 375°F (190°C).
  • In a bowl, combine cubed chicken breasts with salt, pepper, chili powder, garlic powder, and cumin. Toss to coat evenly.
  • Heat vegetable oil in a skillet over medium-high heat. Add seasoned chicken and cook until golden brown and cooked through, about 5-6 minutes. Remove chicken from skillet and set aside.
  • In the same skillet, add sliced onions and garlic. Cook until onions are translucent, about 3-4 minutes.
  • Add sliced bell peppers to the skillet and cook until they are tender-crisp about 4-5 minutes. Squeeze lime juice over the peppers and onions, then remove from heat.
  • On a large baking sheet, spread out the tortilla chips in an even layer.
